I love to have ready-made proteins waiting for me when I get back from an Orangetheory Fitness class. The other reason I created this recipe is because I crave a good curry without all the hard work cooking a good curry entails. You know? the mixing and roasting and grinding, the cleaning and prepping and chopping, the long saute and the longer simmer. And the cleanup.
So, I usually buy a ton of chicken drumsticks from my butcher (Pete’s meat on Arbutus and 12th)…or from Urban Fare in a pinch – although the last time I bought from UF it was quite tough, not the nice tender meat like from the butcher’s.
Once I get home, I like to clean it well with vinegar and salt, washed in cold water, pat it dry, and parcel those off into 8 pieces per Ziplock bag.
The day before I want to make this recipe, I will defrost a bag in the fridge overnight, and the next morning toss the chicken with the masala, seasoning, tomato paste and olive oil together, set it in the fridge to marinate for the day.
When it is time to cook…start the oven, prep some veg, start a carb. While the chicken is baking, whip up the sides, or reheat leftovers if you have it. Have a shower, get into pjs, and dinner is ready. Boom. Time for Miss Marple.
8 Chicken Drumsticks, cleaned and prepped 1 tablespoon Kitsilano Masala 1 tablespoon Guyanese Green Seasoning ¼ cup Extra Virgin Olive Oil 1 small tin Tomato Paste (equivalent to 1 level tablespoon) In a large bowl, combine the chicken drumsticks with Kitsilano Masala, Guyanese Green Seasoning, olive oil, and tomato paste. Wearing a pair of gloves, mix the ingredients thoroughly with your hands. Ensure the marinade is spread evenly on the chicken, even under the skin. Arrange the chicken drumsticks on a parchment paper-lined sheet pan, spacing them evenly. Pour any excess marinade over the chicken. Every drop adds flavour! Bake in a preheated oven at 380 degrees for 35 minutes. Remove from the overn and let cool. Enjoy your chicken! Serving Suggestion: While the chicken is baking, you can prepare or reheat side dishes.
